Select the Settings cog on the top and then select Account > Automatic replies. To work around the issue with classic Outlook, switch Office to Semi-Annual Enterprise Channel. This will ensure you are on the latest build with security updates, and you will not get the bug.
When the Out of Office (Automatic Replies) are configured for an On-premises Exchange mailbox using the settings in the Outlook for iOS and Android apps, the settings will appear to be set but will revert to the previous setting once the settings options are closed from within in the app.
